Sorghum Based Batter Mix
For Chicken Fingers and Onion Rings (e.g. Vidalia)
Ingredients
- 1 cup sorghum flour (e.g. from www.twinvalleymills.com)
- 1 TB baking powder
- 1 egg white
- salt to taste
- 1/2 tsp spice mix (e.g. Trader Joe's 21 Seasoning Salute)
Directions
- Mix together the dry ingredients in a bowl.
- Thin out with seltzer water until thin pancake like batter. I used lemon flavored seltzer.
- Dip chicken and onion rings into the batter and deep fry in a "Fry Daddy" or other deep fryer.
- I used safflower oil.
I tried to do this in a pan, but I just couldn't keep the oil at the right temperature.
