Biscuit Mix II
I don't know what everyone can have and not have but here is the GF recipe I use for my "biscuit" sandwiches, pizza crust and brown sugar/cinnamon wheels. Key for all I think is to allow enough time to rise.
Ingredients
- 2 C tapioca flour
- 2 C white rice flour
- 2/3 C powder milk substitute
- 4 tsp. xanthan gum
- 1 1/2 tsp. salt
- 1/4 C sugar
- 1/2 C warm water
- 2 tsp. sugar
- 4 tsp. dry yeast
- 1/2 C warm water
- 4 eggs
- 4 Tblsp. oil
Directions
- Mix 1/2 C warm water, 2 tsp. sugar and 4 tsp. dry yeast.
- Mix 1/2 C warm water, 4 eggs, 4 Tblsp. oil.
- When you mix the yeast mix first by the time you get to the dry it should be ready to all mix.
- Add the egg mix first to dry ingredients and yeast mix last.
- I just pat out my biscuits to size using a little tapioca flour to keep from sticking and place on lightly greased baking sheet and set in oven to rise at very low temp like "warm" or 200°.
- After rising to about double then turn temp to 325° and cook for about 10 minutes depending on size of biscuits you make.
- For pizza crust use the same mixture, grease baking sheet, again set in warmed oven to rise for about 5 minutes...hard to tell when it rises...add your pizza stuff and bake for about 10 minutes at 325°...I LOVE it !
- For brown sugar/cinnamon rolls.....roll some dough out on a cutting board that you can place in warmed oven to rise about 5 minutes, take out, spread lightly with butter, brown sugar and cinnamon. Start at one end rolling up into long log and cut and place wheels on lightly greased baking sheet for 10 minutes at 325°.
Can freeze and defrost these whenever as well.
