Non Tomato Sauce
Tomato is part of the deadly nightshade family. Here is my really tasty non-tomato sauce recipe:
Ingredients
- 2 carrots
- 1 courgette (known as zucchini in the US)
- 2 cloves garlic (whole)
- 1 small onion
- 4 red peppers
- 1 tbsp olive oil
- 1 tsp mixed herbs
Directions
- Peel the carrots and chop into batons along with the courgette.
- Chop the onion and peppers into quarters.
- Coat the whole vegetable mixture with olive oil and herbs and roast in the oven until the skin on the peppers starts to blacken.
- Remove from oven and peel the skins from the peppers.
- Put the roasted vegetables in a food processor and liquidise to a smooth consistency by adding water until you get the desired thickness.
Serve hot over gluten free pasta or meatballs.
