Banana Pecan Quickbread
Ingredients
- 1/2 c. margarine
- 3/4 c. sugar
- 2 eggs
- 3 overripe bananas
- 1 t. vanilla or 1/2 t. coconut flavoring
- 2 c. All Purpose GF Flour Mix (click for flour recipe page)
- 1 T. baking powder
- 1 c. pecans, finely ground
Directions
- Cream margarine with sugar
- Beat in eggs, bananas & flavoring
- Blend in remaining dry ingredients and pecans for 1 min.
- Pour batter into greased 5 x 9" loaf pan
- Bake at 350 deg. for 1 hr.
- Do not underbake
