Chocolate Cake II

 

Ingredients
  • 1/2 c oil
  • 1/2 c buttermilk substitute
  • 1 egg
  • 1 tsp vanilla
  • 1/2 c boiling water
  • 1 c sugar
  • 1 1/4 c sorghum flour
  • 1 1/2 tsp xanthan gum
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 T baking cocoa
Directions
  1. Beat together oil, buttermilk, egg and vanilla.
  2. Sift dry ingredients and add, beating well.
  3. Add 1/2 c. boiling water.
  4. Beat till smooth.
  5. Spray 8" square pan with vegetable oil spray.
  6. Pour cake batter into pan.
  7. Bake at 350° for 35-40 minutes.
  8. Cool.
  9. Frost with favorite frosting, if desired.
