5 Alive Cake

(gluten, dairy, egg, soy, corn, rice and nut free)

Ingredients
  • 1/2 c GFCF margarine
  • 1 cup granulated sugar
  • 2 1/2 c GF flour (3/4 c potato, 3/4 c tapioca. 1/2 chana and 1/2 basjri - light buckwheat)
  • 2 1/2 tblsp safe baking powder
  • 1/2 tsp sea salt
  • 3/4 5 Alive or other citrus juice, reconstituted
Directions
  1. Preheat the oven to 375 ° F.
  2. Prepare a square 8" x 8" cake pan by greasing and dusting with potato flour, or by spraying with an acceptable vegetable spray.
  3. In the mixer bowl, blend together margarine and sugar.
  4. In a separate bowl, sift together the flours, baking powder, and salt. Repeat two or three times to add lots of lift to the GF flours.
  5. Gradually add the flour mixture into the creamed margarine and sugar, alternating with the reconstituted juice.
  6. Do not over mix as this will make the finished product tough.
  7. Pour into the prepared pan and bake for 35-40 minutes.

If you prefer, this recipe can be made into a vanilla cake by replacing the juice with 1 cup of water and 1 tsp of GFCF vanilla.
