GF Spritz Cookies

 

Ingredients
  • 2 sticks (1/2#) unsalted butter substitute, slightly softened
  • 3 oz cream cheese substitute, slightly softened
  • 1/2 c sugar
  • 1 tsp vanilla
  • 2 c gf flour mix (I used my modified Featherlight Mix)
  • 1/4 tsp xantham gum
  • pinch salt
Directions
  1. Cream butter and cream cheese.
  2. Stop to scrape sides.
  3. Add sugar to butter mixture and cream.
  4. Add vanilla and blend.
  5. Add dry ingredients and mix well until you have a stiff dough.
  6. Stop and scrape sides at least once.
  7. Refrigerate dough for 15 to 30 minutes until it is less sticky.
  8. Pack dough into a cookie press and press cookies onto ungreased baking sheets leaving about 1 inch between.
  9. Keep unused dough chilled until needed.
  10. Decorate with colored sugars or other decorations.
  11. Bake on tray at a time on rack set in upper 1/3 of oven at 350° for 9-11 minutes or until just starting to brown.
  12. Cool slightly on trays before removing to racks to cool completely.
