Strawberry Shortcake
Ingredients
- 1/3 cup shortening
- 1/2 cup potato starch
- 3/4 cup cornstarch
- 1 3/4 t xanthum gum
- 1/2 t salt
- 1/4 c sugar
- 1 T baking powder
- 1/4 t baking soda
- 3/4 c gf/cf milk (e.g. rice milk)
- 1 egg
Directions
- Preheat oven to 375.
- Mix ingredients to remove lumps.
- Roll or pat on a lightly dusted (cornstarch) surface, to about 1/2" thick.
- Press into a lightly greased pie or cake pan.
- Bake for 15-20 min. or until lightly brown.

Clean and hull 1 quart of strawberries. Cut in halves and place in bowl, mixing with 3/4 c sugar. Crush some of them with a potato masher, or back of spoon (don't worry about how much you manage, adds to the juice). Let stand about 30 min. Spoon over shortcake, top with milk, ice cream or whipped cream. |
