GF chicken nuggets
This recipe also works well for fish nuggets.
Ingredients
- Chicken breast cut up into bite size pieces
- Rice and/or sorghum flour, potato or corn starch in a 2 to 1 ratio of flour to starch
- Paprika, salt, pepper, garlic powder, onion powder, whatever other spices look good
- Olive or coconut oil
Directions
- Mix the flour, starch and spices together in a bowl.
- Dip the chicken in water and roll in the flour mix.
- Fry in oil.
- Use good paprika...that is important.
What I usually do is save flour mix leftovers and use that. I put GF cereal or crackers that my son won't eat in the food processor, grind them to dust and put that in, too.
