GF chicken nuggets

This recipe also works well for fish nuggets.

Ingredients
  • Chicken breast cut up into bite size pieces
  • Rice and/or sorghum flour, potato or corn starch in a 2 to 1 ratio of flour to starch
  • Paprika, salt, pepper, garlic powder, onion powder, whatever other spices look good
  • Olive or coconut oil
Directions
  1. Mix the flour, starch and spices together in a bowl.
  2. Dip the chicken in water and roll in the flour mix.
  3. Fry in oil.
  4. Use good paprika...that is important.

What I usually do is save flour mix leftovers and use that. I put GF cereal or crackers that my son won't eat in the food processor, grind them to dust and put that in, too.
