Ginger Chicken

Ingredients

  • one big chicken breast
  • one cup of white wine
  • one extra large (or two medium) tomato(s), cut up
  • one medium sized red pepper, cut up
  • 1/2 large onion, cut up
  • ginger, pepper and curry powder - may use red chili powder too if desired

Directions

  1. place chicken, wine, vegetables and spices in a glass cooking container or saucepan
  2. note - a little ginger goes a long way
  3. cook for 45 minutes without touching it
