Broccoli Salad
Ingredients
- 4 cups broccoli florets (small pieces)
- 1/2 lb. of bacon (Applegate OR Shelton's/nitrate free)
- 1/2 cup apple, diced
- 1/4 cup red onion, diced
- 1/4 cup raisins
- 1/4 cup sunflower seeds
- 1 1/2 cup mayonnaise (Spectrum soy and egg)
- 4 Tbsp. lemon juice (fresh lemon)
- 1/2 cup sugar (more or less to taste) I use Florida Crystals Milled
Directions
- Cook the bacon until crispy.
- Drain on paper towels and then crumble.
- Toss together the apple, onion, raisins, sunflower seeds and bacon.
- Add to the broccoli in a large bowl.
- Mix in the mayonnaise and lemon juice.
- Add the sugar.
- Toss to coat.
- Refrigerate for at least an hour before serving.
