Bubble & Squeak

This bubble & squeak recipe is great for using up left over roast dinner bits and pieces, especially Christmas dinner.

Ingredients
  • 700 g boiled potatoes
  • 1/2 cup milk substitute
  • 50 g GFCF margarine
  • 500g leftover or fresh vegetables, such as cabbage, brussel sprouts, leeks and carrot. (cooked)
Directions
  1. Boil the potatoes until tender, then mash with the milk substitute and margarine.
  2. Chop the cooked vegetables into small pieces and add to the potatoes.
  3. You can also add any leftover roast potatoes.
  4. Heat a little more margarine in a frying pan and add the mixture, smoothing down the top.
  5. Brown the underside, then turn over.
  6. It will fall apart a bit, but the more you get the mixture lightly browned, the better it tastes.

Great served with grilled sausages and onion gravy. A bit of British comfort food.
