Hawaiian Rice

This is an easy, baked rice side dish. May bake with oven-fried chicken, just adjust time to correspond to cooking temperature of the chicken.

Ingredients

  • 1 1/4 cup uncooked brown rice
  • 1/2 cup drained crushed pineapple-reserve juice
  • 1/2 cup raisins
  • 1/2 large apple/pear-peeled and cubed
  • 1 small onion-chopped
  • 1 8 oz can sliced water chestnuts
  • 1 rib celery-chopped
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon tumeric
  • 1 Tablespoon apple juice concentrate
  • 2 tablespoons soy sauce
  • Juice of drained pineapple + water to = 2 1/2 cups liquid

Directions

  1. Mix all ingredients in 1 1/2 quart casserole dish.
  2. Stir with a fork.
  3. Bake covered in 300 degree oven for 55 minutes.
  4. Let sit, covered for 15-20 minutes.
  5. Fluff with fork and serve.
  6. Freezes well.

This recipe doesn't work for the Feingold group, but you can delete and add fruits as acceptable to your family's needs.
