Shirley's Potato Latkes
A traditional Hanukah dish among many Jewish people, while others make donuts. The common theme is to eat something cooked in oil.
Ingredients
- 3-4 lg potatoes
- 2 onions
- 3 lg eggs
- 3 TBS flour (rice flour is fine)
- 1 tsp salt
- oil for frying
Directions
- put cut up, skinned potatoes in food processor (or traditionally potatoes were grated with hand grater) until minced
- add onions and chop them
- some people like everything chopped fine, we like ours with big peices of potato and onion
- add remaining ingredients and mix
- heat oil on med. high heat in frying pan and fry until golden brown
