Shirley's Potato Latkes

A traditional Hanukah dish among many Jewish people, while others make donuts. The common theme is to eat something cooked in oil.

Ingredients
  • 3-4 lg potatoes
  • 2 onions
  • 3 lg eggs
  • 3 TBS flour (rice flour is fine)
  • 1 tsp salt
  • oil for frying
Directions
  1. put cut up, skinned potatoes in food processor (or traditionally potatoes were grated with hand grater) until minced
  2. add onions and chop them
  3. some people like everything chopped fine, we like ours with big peices of potato and onion
  4. add remaining ingredients and mix
  5. heat oil on med. high heat in frying pan and fry until golden brown
