Roast Potatoes
Ingredients
- 5 lbs of potatoes cut into wedges
- olive oil
- lemon juice
- salt
- pepper
Directions
- Boil the potatoes slightly in this mixture plus some water enough to soften but not cook through.
- Put them into rectangular glass pans and roast them in the oven at 350° for about 30-45 minutes, with plenty of the seasoning mixture.
If you have the time, I suspect that soaking the potato wedges in a mixture of the other ingredients would have improved the quality.
